Veggie Quesadillas


What’s not to like about quesadillas? I’ve never made them before but we both absolutely loved them!

If, like me, you’ve not encountered them before, they’re basically posh roasties using wraps instead of sliced bread.

You can put anything you want in, along with some cheese – I just threw in some ingredients needing used up. I had some mozzarella in so used that, but it’d also be good just with cheddar. This is a vegetarian recipe, but you can add some cooked ham or chicken if you want.

Veggie quesadillas (serves two)

2 large flour tortilla wraps (I normally make my own but used bought ones this time)
30g cheddar, finely grated
1/2 mozzarella ball, finely chopped
1 red pepper
1 spring onion
50g frozen sweetcorn, defrosted by pouring boiling water over them
Large pinch dried crushed chilli flakes
1 piece sandwich pickle, cut into small pieces (optional)

To serve:

Green or mixed salad
Large dollop salsa

Cut the pepper into large chunks and grill, along with the whole spring onion, until tender and starting to blacken (I used my George Forman grill).

Once the pepper and spring onion is cooked, chop into small pieces. Mix all the filling ingredients together in a bowl.

Put the first wrap onto the hot George Forman grill, or a heated frying pan, and top with the filling ingredients. Spread out and top with the other wrap and close the lid of the grill (or press down with a fish slice if using a frying pan). Cook for 3-4 minutes in the grill and remove once the outside has browned and the cheese has melted inside.

After a couple of minutes, turn if using the frying pan and cook for a minute or two more, again until browned on the outside.

Slice into wedges and serve with salsa, soured cream and/or a salad.
