Mealplans and Spending Update 16/06 – Storecupboard Week

Staying in budget has been a bit tricky this month, because there’s five weekends, which is when I do my shopping.  Earlier this week I realised we only had £40 left, which isn’t very much money, so I planned our meals for next week and until the Tuesday after (when I get paid and will go shopping again) to make sure we could stay in target.

We had some cleaning supplies we needed to get (plus I had to get supplies to make a birthday cake) and so I wanted to keep the rest of this week’s shop to under £25 or so, leaving us a fiver for next Sunday to pick up some milk, bananas and anything else that can’t wait until Tuesday.  The only way I could thing to work it was to have a ‘storecupboard week’ and try and make as many meals as possible from what we have in.

I was really surprised that it wasn’t that difficult – I don’t think I stock up too much on food, but we actually have quite a lot of food just sitting in the fridge, freezer and cupboards, including a decent amount of fresh veg.

For example, we have all the ingredients for homemade pizzas, except mozzarella, sitting around in the flat.  I have two portions of vegetable chilli left from last week.  We had everything in to make hummous, pittas and various salads.  Even the veggie shepherd’s pie only needed a parsnip bought to finish it off.  I was most proud of being able to come up with a  three course meal for tonight, since Dave’s mum has come to visit, with mostly food we had in (it was delicious and I’m totally stuffed now!).

Mon 17 – (Dave’s mum visiting) – hummous, pittas and salads

Tues 18 – chicken, broccoli and cheese lasagne with salad

Wed 19vegetable chilli with rice

Thurs 20homemade pizzas with salad

Fri 21 – veggie shepherd’s pie & peas (made with pulses, not fake meat)

Sat 22 – away celebrating a friend’s birthday!
